Fitness Friday!

It's the 4th week of Fitness Friday! Last week I missed the blog post but I still followed the goal for week 3. Week 3 was NO french fries... I was doing so well until last night, I slipped up. However not bad for slipping up once in 7 days.

So far I have lost 30lbs and have 20lbs to go to get to my first goal weight.

This week was pretty busy and haven't counted calories and ate wayyy too many sweets! eek!


So my goal this week is to get back on track with counting calories and exercise. I'm so glad I joined the salsa babies class, which is once a week.

I really want to get back to posting recipes on my recipe blog. The other night I made coconut red curry chicken with jasmine rice. It was yummy! I posted the recipe here.


Week 4 goal...Drink only water throughout the day after breakfast

Weekend of cooking!

The weather this weekend was crazy. It rained all day Saturday then we had a snow storm Saturday night.

Husband had to work from home this weekend so we spent a lot of time indoors. Which was great because I made delicious meals all weekend! WINNING (LOL)

I used my little food processor like crazy haha!
I made my version of re-fried beans. Black beans and garlic fried with a little coconut oil. It turned out perfect!

Thank you for all the great comments on my last post. I love calorie counting especially on those days we eat out. I like knowing how many calories the foods are so I can pick and choose the healthier choices.

Tonight I tried a new Salmon recipe.

I bushed melted coconut butter on the salmon and topped it with bread crumbs and cilantro. Placed it in greased (coconut oil) dish and cooked it for 20mins at 375F
My husband and I loved it! I served it with a avocado salad and sweet potatoes.

My goal this week is to have homemade meals for Breakfast Lunch and Dinner for 5 days of the week!

Skinny Italian!

I really loved watching RHONJ this year and just loved Teresa! She has 4 little girls, yes 4! and she looks great! She is totally Italian and loves to cook. In her book she talks about Skinny Italian cooking and how Real Italian food is by far from fattening! The people in Italy are not fat at all! They enjoy their food and eating is a social gathering with friends and family. I remember when I was young we lived with my grandparents and when it was dinner or a Sunday lasagna lunch, you were there sitting and eating with the whole family for a couple hours, no running off. (even though as kids we would try and run out to play as fast as we could haha!) Food was to be eaten slowly and enjoyed! We tend to forget this these days with being so busy!

Her book also inspired me to write down some yummy Italian recipes that my grandmother makes. My grandmothers food is by far the best, of course! Ha! One of my favorite meals my grandmother makes is riso e latte. Rice with milk. NOT to be confused with Milk Rice! the sweet one, I like that too but the one I'm talking about is the most soothing meal! Not sweet. Just perfect on a cold day! (I'll get the exact recipe for us soon)

It's funny that being Italian I don't usually cook Italian. We live in a city full of multiculturalism so we love sooo many different types of foods. This will never change, but I want to perfect some of my own favorite Italian dishes to pass down to my kids.


So with all the Italian talk, last night husband and I were talking about the Europe trip we want to take. I've been to Italy when I was younger, I went for 2 months! I absolutely loved it. So I can't wait to get to my roots again soon! Places I've been Roma, Napoli, Modena. I have friends and family in these areas. I just know my husband would love it there too.

Gelato, Pizza, Pasta, cheese... oh my!
