No Fail Banana Bread!

 NO FAIL BANANA BREAD!






No fail banana bread recipe! Moist and yummy! 





2 of cups flour 

2-3 bananas 

1 cup sugar ( I use cane sugar)

1tsp baking powder 

1tsp baking soda 

3/4 cup veg oil ( I use avocado oil)

2 eggs 

1/3 milk 

1tsp vanilla 


My no mess steps below! 


  1. Add 2 ripe bananas, 2 eggs, and oil to a bowl and Blend or Whisk. 
  2. Measure 1 cup sugar and add to the bowl of wet mixture and blend 
  3. Measure 2 cups of flour and add 1tsp of baking powder and 1tsp baking soda.
  4. Slowly blend in flour to the wet mixture and blend. 
  5. Add 1/3 of milk and 1tsp of vanilla to bowl
  6. Grease your pan and pour your batter in!

Add other ingredients like cinnamon, crushed nuts or chocolate chips!


Today I used a loaf pan.

 Bake 350 for 50 mins. Time may vary.


Sometimes I scoop out into muffins, the kids love that. 


Bake 350 for 20 mins if using a muffin pan. 

Bake 350 for 30 min if using a 9x13 dish . 

Bake 350 for 50 mins if using a tall loaf pan like mine.(time may vary depending on pan size)

Mama T's Empanada Recipe

Our family favorite empanadas! (click to see the IG reel)





I buy these pre-made empanada dough shells at my local Walmart and at some smaller markets in the area. I keep them in the freezer and always have them on hand for these yummy beef empanadas! 





These can be made with left over chilli (yup) or left over ground beef from taco Tuesday! 


The recipe for the beef stuffing can really be anything you like. Mine is always different depending on what I have around. I actually use Ground Veal most the time. Some ingredients I do love in the mixture would be, cumin, paprika, adobe seasoning, cilantro diced potato and black beans. (Be sure to drain excess liquid) I like to make the filling the day before and refrigerate the mixture over night or at least a few hours so you can scoop in the shells cold. 


Once we have the filling ready and dough thawed , we can stuff them! 





Ingredients for my empanadas 


Beef or Veal Filling

Empanada dough 

Cheese (marble or mozzarella, monetary Jack is yum too, really any you like, experiment)

Boiled eggs (cut them up to bite size)

Olives (I usually use the small stuffed ones but I only had these sliced ones today) 

Eggwash 

Baking sheet and parchment paper 


Preheat oven 400F




Follow these steps! 

Scoop beef mixture

Add cheese

Add a piece of boiled egg 

Add some olives 





Brush edges with egg wash and use a fork to press down the edges. 


Brush the full empanadas with egg wash. 






Put them in the oven for 25min or until golden brown 





These are soo good! My family eats these all up! You can put anything in them really!


I also made some stuffed with hot salami and cheese! 





I usually make extra  and freeze some for easy lunches, just pop them in the microwave or toaster oven.

Tostones!

 Here is one of my 2nd favorite breakfasts,  my first is Baleadas!

What you need!

Green Plantains!

Oil to fry them up

Salt

Bacon, eggs, avocado, refried to fill your sandwich!






First up. Cut the plantains about 1inch thick. Fry them until lightly golden.

Take them out and squash them! Then fry them again until golden brown. 

I used 2 tostones and filled mine up for a yummy breakfast sandwich! The kids just ate them alone! Perfect salty snack!

TikTok Recipe for the win!

 Ok we all have learned so much this past year... FROM TIKTOK... Ha! I know you have learned some hacks that you now use on a daily basis! I know I did! HA!

This recipe is my new favorite! SOOOO GOOD!






Everyone is doing this recipe with pasta and I will do that next time. This is my low carb version (nothing against pasta, I LOVE pasta too) 


Spaghetti Squash Feta tomato recipe!

What you need:

Spaghetti squash

Feta cheese

Cherry tomatoes

Garlic

Italian seasonings (I used a blend I have)

Olive oil


1. Preheat oven at 400F

2. Cut the squash in half, drizzle with olive oil. Lay Cut half down and cook for about 40 mins. 




3. In a separate oven dish, add cherry tomatoes, feta cheese, italian seasoning, garlic and olive oil (i know I don't have measurements here, I did a one serving for myself so only had 8 cherry tomatoes a small chunk of feta, 2 small garlic cloves.drizzled olive oil, baked for about 20 mins watch it sizzle! So depending on your serving, add more or less! I don't think you can go wrong here!




4. Use a fork to pull the strands from the spaghetti squash

5. Mix the cooked feta, tomato into a yummy creamy sauce

6. ADD the spaghetti squash and enjoy!!! SOOOOOO GOOD!

New Recipe Alert!!



Ohhhh yessss! 

This recipe is now a favorite and will be added to my weekly dinners! 





Crispy cabbage! This will make it easy to up my veggies at lunch and dinner! 

Sooo easy! 

set oven to  425˚F 
1 package of coleslaw mix or shredded cabbage 
Cookie sheet lined with parchment paper 
Nonstick cooking spray
1tsp of olive oil 
2 tbsp Of Everything but the bagel seasoning 
(I got mine here
Sea salt / pepper 

Lightly coat parchment with cooking spray 
Toss ingredients together and lay a thin layer of cabbage on cookie sheet

Cook for 15 min turning once and until cabbage is dry and edges look brown and crispy 






And there you go! A yummy veggie addition to your meal!

Summer smoothies!

I have soo many great smoothie recipes! But for today I’ll share a few of my summer faves!!!!

Any protein shakes work for the recipes, I use my favorite shakeology. Vanilla, chocolate or cafe latte! 

What you need-
Blender or mini blender 
Frozen fruits/ veggies 
Protein shake 
Almond milk or any milk or water

Today’s fruity smoothie recipe! I enjoyed this one outside while the kids were playing! 

1 scoop of vanilla protein
 (I used vegan vanilla shakeology) 
Handful of frozen strawberries and banana 
10oz almond milk

Blend! So soo good and soo easy! 





Here are a few others I love! 

Boosted iced coffee (ok not a smoothie but cold and fresh) 
10oz coffee with almond milk 
with half a pack of cafe latte shakeology. 
Shake it up, add lots of ice! And enjoy!!




If you are looking for a balanced chocolatey smoothie, and sneaking some veggies in there haha. I have a good one for you! 

1 scoop of chocolate vegan protein powder 
1/2 cup of frozen cauliflower 
1/2 a banana 
Handful of ice 
A drop or 2 of vanilla extract
Sprinkle of Cinnamon

Blend up and enjoy this balanced cinnamon roll smoothie treat! 

Ahh there are soo many combos you can do! You get loads of protein and nutrients without all that sugar. Just look at this example I found on Pinterest. 

Ummmm 28g of sugar in a Starbucks! No thanks!

Easy meals!

Let’s talk easy healthy meals!

We all know the deal! Veggies, fruit, protein, healthy carbs! 
So how do we put it all together the best way to get the most nutrients from our meals!? I’ll show you some examples! 

Take a look at these combos. Nothing special, no crazy recipes with tons of ingredients you need up rush out to buy. Just every day foods! 

Let’s plate it! 



Here’s breakfast. Whole wheat English muffin topped with an egg, I think I might have a slice of cheddar cheese under there too. Some bacon and heck I threw in a broccoli from dinner left overs 😛. This! This is a balanced breakfast! Even better with Stonemill bread which is my favorite whole grain bread. 

Lunch! 



Another easy meal! I split the whole wheat tortilla in half because it was a big one. Stuffed it with deli turkey, cheddar cheese, mustard and lettuce. With a side of more veggies! So easy and balanced! 

Dinner! 


Protein and lots of veggies!!! Salad, cauliflower bites mm mm and grilled chicken. Soo good. And soo easy.

Eating healthy doesn’t need to be hard! Use what you have, keep it balanced and there you go! You’re eating healthy!

Yummy Easy Banana Bread




No fail banana bread recipe! Moist and yummy! (updated post here)

2 cups flour 

2-3 bananas 

1 cup sugar

1tsp baking powder 

1tsp baking soda 

3/4 cup veg oil ( I use avocado oil)

2 eggs 

1/3 milk 

1tsp vanilla 


My no mess steps below! 




  1. In a bowl to blend with blender add ripe bananas, 2 eggs, and oil. Blend 
  2. Measure 1 cup sugar and add to the bowl of wet mixture and blend 
  3. Measure 2 cups of flour and add 1tsp of baking powder and 1tsp baking soda.
  4. Slowly blend in flour to the wet mixture and blend. 
  5. Add 1/3 of milk and 1tsp of vanilla to bowl

Optional - Add other ingredients like crushed nuts or chocolate chips!


Sometimes I scoop out into muffins, the kids love that. 


I use a 9x13 pan. It’s more of a banana cake! 


Bake 350 for 30 min. Check with toothpick. My oven is usually exact with 30min with a 9x13.

Super Easy Lasagna Recipe




Easiest and most delicious Lasagna recipe using a pressure cooker for the meatballs and sauce! 

Ingredients

2 bottle of tomato purée 

2 mozzarella packages

Parmesan cheese

2 lean ground veal packages (if you buy the veal at the butcher, tell them to double grind it) 

1 package of lasagna noodle

Italian style bread crumbs 

1 egg (I don’t use eggs because of allergies)

Onion/garlic 

Olive oil 


Turn the sauté setting on the pressure cooker, add olive oil, (I don’t have specific measurements, but coat the whole bottom of the pot with oil!) Slice some onion very thin and 1 garlic very thin. Let these cook in oil then add the bottles of tomato purée you can add some water to jars to get all the sauce out and pour in the pot. Season with oregano/basil/ Italian blend. I also sprinkle Parmesan in the sauce mm mmm. 


Add veal to a bowl, season with with garlic powder, salt. (Any seasonings you like) Add breadcrumbs, little at a time and some olive oil. Mix with hands and form the meatballs.


Place the meatballs in sauce.


Set the pressure cooker to Soup/stew 30min!! 

(follow your pressure cooker/instapot directions) 


When sauce and meatballs are done... release the steam and open your pressure cooker. 


spoon out meatballs with some sauce in a bowl. 

Mash up the meat balls set aside. Make as saucy as you like. 


Cook lasagna noodles.


Drain. 







Get out your baking dishes to prepare the lasagna! 


Add sauce on the bottom of each dish, place lasagna noodles, meat sauce, mozzarella, lasagna, repeat. I think I did 3 layers. 

Once you get to the top, the last layer. Add the noodles and add sauce only, top with mozzarella and parmesan cheese 


Wrap with foil. Cook 30 min at 400F. 

Then remove the foil, cook another 15 mins

And done! A yummy Sunday dinner! Or Christmas lunch like we just had! Enjoy! This is the exact recipe my mother used for our Sunday lunches, minus the pressure cooker, ha! But the sauce and lasagna is sooo yummy! You’ll never know the difference!  


P.S save the extra sauce in jars for other dishes you can make during the week.

Mason jar portion fix meals!




If you've been following me on instagram (aka_mama_t)

Then you have been seeing all my tips and inspiration on
eating healthy and a healthy balance of it all.

I came across the idea of the Mason Jar salads and quickly realized that
I will use these jars as my quick, go to lunches!
Not only with salads either. You'll see below!

Using my portion fix containers, I decided to make a warm lunch in my mason jars.
The mason jars save space in my fridge too, so I love that. No plates or big containers taking up space.

So to meal prep at the beginning of the week. I grabbed the costco ready made chicken I had in the fridge and frozen veggies and made a quick stirfry. I also made some oven baked sweet potato chunks.

Using my portion fix containers, I just scooped what I needed.
1. The Red container for the chicken (1 Red/protein)
2. The Green container for the veggies (1 Green/veggie)
3. The Yellow Container for the sweet potato(1 Yellow/carbs)








Super easy meal prep. Everyday this week I had lunch in the fridge ready for me!
I just grabbed a mason jar that was already made to the exact portions I need for lunch.
Poured them into a bowl and heated it up in the microwave. I added a touch of hot sauce
and lunch was warm and delish!






The week before I made loaded salads in my mason jars. Soo good too!

1. Red container for the chicken (1 Red/ Protein)
2. Purple container for apples (1 purple/ Fruit)
3. Green container for spinach (1 Green/Veggie)
4. Yellow container for quinoa (1 yellow / Carb)
5. Orange container for balsamic dressing (1 orange/ dressing)
6. Blue container for feta (0.5 blue/fats)

To ensure my spinach didn't get soggy, I put the dressing at the bottom.
Then added the quinoa, chicken, apples, spinach and feta.
Easy to grab from the fridge, toss in a bowl and eat my yummy lunch!

More blog fun

If you look to the right ----> you'll see my recipe blog and even a wine blog. I haven't written in them since 2013! It didn't feel like it's been that long but it has been! 

2016 I want to begin blogging more of my favorite recipes for my family  and baby food too. 

Especially easy meals like this one in the pressure cooker.

A total of 10mins one pot pressure cooker meal. Chicken, veggie and rice!


I also want to blog about wine making on the wine blog.

We have been bottling our own wine!



On this blog I want to continue blogging our daily living. A memory bank of our family. 



Fun things we do ha! 

I also want to get back into blogging fashion! On maternity leave im mostly in tights and long tops ha! 


Some fun january moments so far... A painting birthday party for a cousin! 


Kids loved it!

Little k has been practicing piano and is really enjoying it!


He's also Soo into starwars and can name everyone and tell you his favorite scenes of the movie. 


Now with Michael loving the bouncy gym, im getting a little extra time on my hands ha! 

Michael loves to watch big bro. It's the absolute sweetest thing ever and melts my heart each time! 

Big brother is so protective of little brother and calls him "my baby Michael" I can't take the cuteness!! 


We are a little under the weather the past few days :( but still cute as always! 

We are planning our first family vacation as 4. Little k asks everyday if we are going to the beach. Ha! But he's also loving this snow especially when the school has sleds for everyone at recess!
